We also had a super successful recipe today!  DH and I both agreed that it was our favorite slow cooker dish to date.  And it is quite easy to boot.

Basically, get some beef ribs, pat the rub on them, put them in the crockpot and cook on high for 4 -5 hours.  I was nervous about them going into the pot dry, but all that brown sugar seems to melt with the fat drippings from the meat and serve as a cooking liquid.  At the end, you're supposed to coat them with maple syrup and pop them under the broiler for 3 minutes, but they were already so sweet and yummy that DH decided we didn't even need to wait for that step!  Wink

The rub is 1/2 Cup of brown sugar plus 3 Tbsp of "Taste of Inspirations Maple & Sage Rub", which is a specialty product not available in my grocery store.  The link gives an ingredient list for making an alternative rub; we didn't have all those ingredients on hand, so anything that I was missing, I just substituted with a garlic spice rub we put on barbecue.

Note: The grocery store was out of short ribs, so I used... some skinny thin cut instead.  I'm sure it's equally delicious with normal sized ribs, though.

I've been thinking about that too.  Some of these 4-5 hour recipes, I'm thinking that I may have to start cooking them when I got home from work the day before, so they'll be ready by the time I go to bed that night and we can eat them the next day.  Not nearly as exciting as food ready in a hot pot when you walk in the door, but gotta make it work.

I was thinking the same thing, b/c I am off for the summer, but what's going to happen when I need to go back to work?  I don't live close enough to my job to come home for lunch to turn on the crock pot.  But...I am going to research "playing around" with the cooking times/levels.  For example, the BBQ chicken recipe that I posted yesterday, it said to cook on high for an hour, shred the chicken, then cook on low for three hours.  Well, when I took the lid off to shred the chicken after the first hour-IT WAS STILL RAW!  So I googled how long chicken should be cooked for in the crockpot and on what setting, and it was on HIGH for at least FOUR HOURS.  So I had to modify it.

My point being that perhaps these recipes can be modified to maybe cook on LOW for longer so that we can start cooking it before we leave for work and then leave it all day till we get home?  If anyone tries this, PLEASE let me know how it works out for you.  Thanks!

I have a tendency to put all of slow cooker things on low and leave it all day, I've never had a problem even from cooking from frozen.  If anything I need to turn it down to warm half way through the day but I think out slow cooker is on the hotter side.  But it is a really cheap one thats more than paid for itself over the years.

I cook everything on low all day too.  I turn it on before I leave for work and if I remember I will have my kids turn it down to keep warm when they get home from school.  I don't think it would work for all recipes but the ones I do it works fine.

LadybugsAndBumblebees I tried the BBQ chicken recipe today and it was fantastic.  I added more onion, garlic powder and threw in 3 grated carrots too (great way to add sneaky veggies not that I have that problem) I forgot which BBQ sauce I used it wasn't the suggested one because I don't think we can get that one in the UK.

I bought a 2 person crock pot. It is perfect for just me and the hubs. Our crockpot is HUGE and very old so it is nice to have this small one for weeknight dinners with little clean up and hardly any leftovers.
