Even in the city we have little critters that would love an outdoor crockpot. We also have resident crows that I'm sure would figure out how to get into a crockpot.  Cheesy

I am making a roast in the crock today!  Super simple, beef broth and a package of Lipton's Beef & Onion mix sprinkled over the top.  I love getting home from work and having dinner be ready!

The crockpot is EXCELLENT for warm weather cooking! My gosh girls, just plug that sucker in on the porch! 

Why oh why have I never thought of that before.  I know how I'm cooking this summer.

I love using my crock pot.

One of my favorite (and easiest) recipes is Salsa Chicken.

2 (or 3, really up to you) frozen chicken breasts
1 jar salsa (or tomatoes, if you don't want a Mexican theme)
sour cream to taste

Put chicken breasts in crockpot and dump salsa on top.  Cook low 6-8 hours or high 4-6 hours.  Half an hour before serving, take chicken out and shred it with two forks.  Add it back to the salsa and add sour cream.  Stir and let cook for 30 minutes or so.

Serve over rice.  It's really tasty!



I've tried it with Italian style tomatoes for an Italian taste and my mom's tried it with a sweeter salsa (I think it had mangoes, too?) though I don't know if she added the sour cream to that.

I do basically the same thing for my chicken tacos but I don't add the sour cream in at the end.  Just a jar of salsa and a can of green chilies, cook, shred, eat!

We should have a crock pot challenge where all try the same recipe... such as baking a cake!  There is also a wing recipe I found on Pinterest that I am curious about...

Here is my first recipe for chicken tacos.  These are FABULOUS and so easy!  I usually also make my own shells whenever we have these.  http://www.pinterest.com/pin/186336503301938106/

I actually made this yesterday.  I love my crockpot!  It is one of my most prized possessions.  Smiley  The meat was really good.  I ended up eating it over spanish rice instead of as a taco, though.  I didn't have any of the other fixings.

I have one that is even easier than that.  I use it for pretty much anything Tex-Mex. 
It is simply 4-6 frozen chicken breasts and a package of taco spice.  Put it in crock pot on low for about 4-5 hours, and then check it.  If it shreds with no trouble, it's done.  If not, up the temp to high for half an hour.
