Awesome, CLM! I've never heard of water kefir, only the yogurty stuff. I definitely need to up my probiotic intake. I've tried several supplements, but either noticed no difference or too much of a difference. And never a difference in the source of my probiotic needs - yeast overgrowth!

Do you do any prebiotic supplementation, too?

Oh, totally, we eat tons of onions.
The water kefir is incredible, it's gone from enough granules for 2 quarts of liquid to enough for 8 quarts of liquid in 4 days. I have to start giving some away, I'm going to post it on freecycle tonight.
It has a distinct impact on digestive health, lemme tell ya. It's never been easier to go, lol Wink.

I would have to dehydrate it to allowed for shipping, I'm not sure how to do that properly yet. If you are on facebook though you can join the water kefir and fermenting pages, there are so many people in the states sharing cultures. You are sure to find someone right away like I did Smiley.
I gave away 2 jars today, YAY! The kids and I do like it very much but there are 3 quarts in the fridge and there will be 5 more in 2 days, that is a LOT to drink!

I had a salad with sweet potatoes, lentils, granola, and goat cheese in it over the weekend. It was surprisingly delicious. I never would have thought to put those ingredients together, but they totally worked.

What's everyone eating these days? Tried any new recipes?

I'm starting a 21 day elimination diet (no soy, gluten, egg, dairy, corn, peanuts, sugar/sweeteners) to see if I can regain some energy. I'm just exhausted all the time lately and don't have energy for anything. Also a lot of these are inflammatory and I've been having a rough time with my RA (some of the fatigue is from that I'm sure, but it's so much worse than normal RA fatigue). I'm trying to set myself up for easy meals with some prep.

Right now I'm cooking brown rice and pinto beans with beef broth, lots of garlic and onion (dehydrated minced and granulated of both), celery salt and coconut oil.

I've got a lot of ground beef cooked up in the fridge from taco night and made some Mmmm Sauce last night. Next up I'm going to roast up a tray of broccoli. A bowl of rice/beans topped with meat and veggies and Mmmm sauce is delicious and doesn't contain any of the off-limit-for-now-ingredients.

Good luck, Mare! I know those diets can be rough but I have a friend with RA and she swears it helps her. I hope it works for you too. I think prepping the food in advance will be key - that will be make it harder to find an excuse to slip from the diet Smiley.

I gave this recipe a go the other day... http://produceonparade.com/thai-quinoa-burgers/.

I made itty bitty versions though and served them on whole wheat rolls. I mixed up mayo, toasted sesame oil and srirachi sauce to go with them. A little labor intensive but yum!

Good luck, Mare! I have felt multiple times that I should do an elimination diet, but I can never get started. It's so hard! I'll be interested in how you do!

OMG, those quinoa burgers look amazing, Lime. Must pin and try, though they do look like a lot of work.

I've been slipping on cutting out sugar lately, though intake is still pretty low. Someone brought girl scout cookies into work, and who could turn those down?? I swear office life is the ultimate test of willpower.

We did try pho for the first time recently and it was pretty amazing. I've had a hankering to try photojenn's recipe. Has anyone else had great success with an at-home pho recipe?

Mmm I love pho! Never tried it at home though.

I can't eat quinoa (unfortunate last meal previous to a bout of stomach flu) but those burgers do look good!

Yesterday wasn't bad, I had my rice/beans, broccoli and a little ground beef. Sauces are hard, I need to get some coconut aminos I think, supposed to be similar to soy sauce. Anyone tried those?
