I was thinking strata too. Cooking light has a few good strata recipes. Or maybe the sausage would be good just straight up!

I've never tried a strata before. I have two packages of sausage, so maybe with the next batch (to avoid the 2 egg dishes in one week). Thanks for the suggestion!

I ordered a spiral veggie slicer with a gift cert I got for xmas. It arrived today. I'm looking forward to making some zucchini noodles! Anyone tried them before?

Oh cool! You'll have to let us know how it is! I've been wanting one for awhile. I saw a pad thai recipe a while back with zucchini noodles...I'm sure you can just sub it for anything!

I went out tonight after my meeting and made a healthy choice! Everyone else got burgers and macaroni and they looked so good but I was honestly so incredibly happy with my beet salad. Delicious beets, goat cheese, frisee, walnuts, and a horseradish cream topped with parsnip crisps.

Tomorrow I think I'll finally get around to making that tortilla soup that didn't happen earlier this week!

ooo...I've never tried zucchini pasta! Definitely share! I love the pad thai idea - I saw a similar recipe for spaghetti squash pad thai I want to try.

And that beet salad sounds amazing, Mare. Do you do fresh beets, or pickled?

I still haven't done anything with the venison sausage, either, lol.

I think they were just roasted and chilled, they didn't seem pickled. But there's another place I go to and get a beet salad that they are pickled in house and it's so good! Mmmm!

I want to re-create it at home! Wish I'd bought the roasted, cut beets I saw at Costco the other day!

The tortilla soup is really yummy, not as good as Qdoba but I defintely ate too much of it yesterday...or should I say went overboard with the toppings (avocado, cheese, tortilla chips). My food scale has a dead battery and I'm pretty sure I'm overestimating serving sizes without it. Will have to get a new one this weekend!

a few of my fav smoothies:

spinach, apples, coconut water and banana

with the banana and apples it is sweet enough


another i like

kelp, kiwi, green apple, coconut water again sweetened by the fruit

i also like to use carrot juice sometimes in place of the cocoanut water

i like to start the day with a smoothie, some days i have another at lunch time or just simply try to stay away from soda, white sugar, and starches which is very hard for me, cuz i love potatoes, pasta and rice lol

I try to keep cut veggies and fruit around and love making homemade hummus to go with it.

perhaps this year i will get back into yoga and making better choices
