I've been drinking a lot of tea too! Such a good way to stay hydrated and I think it helps me too with curbing the munchies!

I've been doing pretty well with having fruit or veggies with most meals and snacks. Still craving lots of veggies! Tonight I did chicken, onion, red and green pepper fajitas with corn tortillas. Super yummy and filling! Last night the bf and I did Chipotle, I planned our food out on their sweet calorie calculator, I love when there is a completely customizable one, add cheese, remove sour cream, whatever you want and it will calculate.

Oh, I have some chia seeds (actually two different containers of them ha!) but have yet to use them! I might throw some in a smoothie or something. Also have seen some chia pudding recipes that are kind of intriguing.

Chipotle is so good!! They have good vegetarian options too. I wish there was one a little closer to us.

Let us know what you do with the chia seeds. I haven't tried them.

Where did you get your chia seeds, Mare? I haven't seen them anywhere, but I might not be looking in the right place.

Do you guys have any good tips for jazzing up oatmeal? I want to replace my morning cereal with it, but it's so boring without brown sugar, maple syrup, honey, or all three! Berries and cinnamon? Anything else?

I do craisins and skim milk but that has a lot of sugar too so not a great option. I've also done slivered almonds. I've done baked cinnamon apples with quinoa before and that's okay. Maybe some low fat greek yogurt??

Oatmeal is just so blah without the fun stuff, huh?

I got some chia seeds from iherb.com (if you make an order I have a $5 off code for ya) and some from bulk in Winco.

For oatmeal I cook it with a banana or half a banana, some brown sugar and cinnamon and top it with a good spoonful of almond butter. A little high in calories, but you're getting fruit, protein, good carbs and good fats and it keeps me full a really long time!

ooo...almond butter - I wouldn't have thought of that. I bet it's great with the banana. Mmmm...now I'm actually hungry for oatmeal, because yes, it totally needs something.

I'm going to check the local health food store one more time, and if I still can't get my hands on some chia seeds, I'll take you up on that offer, Mare!

I'm going to give this recipe a try tonight but instead of doing full size hoagie rolls, I plan to make slider versions using French dinner rolls. I'm also going to do a big salad and try to eat more of that than the bread Smiley.

Ooh that looks really good!

Tomorrow I'm making Tortilla Soup and taking it over to the boyfriend's, I love Qdoba's tortilla soup soooo much. I'll probably do some chicken to put in it and maybe a kale salad on the side. I'm trying to remember the recipe I had for kale salad that I loved so much but can't remember what dressing I used!

Thursday is my guild meeting so probably something on the run, I should make something ahead of time to grab and go!

Friday I'm making my own version of the veggie pizzas that Applebee's used to have on their appetizers menu. Flour tortilla for a crust, a little wannabe alfredo sauce (garlic, cream cheese, milk or cream to get the consistency, parmesan), mushrooms, spinach, and artichoke hearts. Bake in a very hot oven until crust is super crispy!

We are doing a veggie and cheese frittata tonight.

My dad gave us some maple venison breakfast sausage that I want to incorporate into tomorrow's dinner, but I have no idea what to do with it. I found a really awesome recipe for quinoa apple salad with maple sausage, but I'm pretty sure no one else in my house would eat it.

I would suggest a strata, but not sure if you want two egg type dishes in a row for dinner! But I love stratas, just torn up chunks of bread, whatever veggies/meat you like and pour an egg/cream/cheese mixture over. Easy to lighten up by using milk instead of cream and going light on the cheese.
