Chia Seed Pudding
Happy New Year! Here is a healthy easy treat to help ring in 2014!


* Warning if you don't like the texture of tapioca pudding - this isn't for you. *


3 TBS chia seeds
1 cup milk ( I used whole because it was in the fridge)
Seasonings ( I used a dash of cinnamon and a splash of vanilla)


Combine- I put mine in a shaker.
Place in fridge.
Stir after an hour or so- I left mine in overnight for a breakfast treat but would make a yummy dessert.

How interesting!  Do the seeds plump up in the milk?

They do and make them a little gelatinous. It isn't solid when its done but is quite thick. I've heard it's ready after 2 hrs but left mine in the fridge overnight.

I know a lady who puts chia in her veggie-fruit smoothies.  Delicious and healthy!  And they grow little tails, lol.

I never thought to put mine in a shaker!  That's a great idea!  I usually do a Mason jar, lid and shake.  It's great with dark chocolate almond milk, too.
