I love all things pumpkin! When this recipe popped up in a web search I knew it had to be made. I've made several changes to it, and now I get requests to make it.

In the pictures I am making a double batch. Then I have one for home and one to share with friends. This recipe also freezes well.

Ingredients:
1 can of pumpkin puree (mine in the picture is a large because my recipe is doubled while baking)
1 1/4 cup of almond milk with vanilla
3/4 cup of sugar
4 eggs, slightly beaten
1/2 tsp. ginger
1 tsp. cinnamon
1 shake of allspice
2 shakes of ground cloves
6 cups of torn bread, in big pieces (Use any bread but in mine I use potato rolls.)

Directions:
Preheat oven to 350.

Combine all ingredients except for bread into a large bowl, and whisk till well combined with good consistency.

Bread into pumpkin mixture

Dump the bread into bowl,  and stir till combined. Don't stir too much or bread starts to fall apart. You want chunky bread pieces in the pudding.

Let rest in bowl for 10 minutes. This allows the bread to absorb the wet ingredients.

Transfer mixture into a 9 inch deep dish pan,  pre-sprayed with cooking spray.

Bake for 1 1/2 hours in a 350 degree oven, or till a knife inserted in the center comes out clean.

Let cool to room temperature before serving.

These crust areas are the best part to me. Crust outside and soft pumpkin deliciousness inside. This is where the large chunks of bread come into play Smiley

That looks amazing!  I love potato rolls, I bet they add a lovely depth of flavor..

It is very easy to make. Takes maybe, 20 minutes. And that includes the resting of the mixture.
