My family hosts a cookie exchange every year which seems to get bigger and bigger each time.  Me being my strange self I always want to try a new recipe to share with everyone.  Some have gone over well, and some have not....

This year since I feel super pressed for time I wanted something easy, looks nice, and tastes great.  After scouring Pinterest I decided on making these Mint Thins.  

You will need:
A box of Ritz Crackers
1 Bag of Semi Sweet Chocolate Chips
1/4 tsp of Peppermint extract
Sprinkles, or crushed peppermints for garnish

I found the easiest way to dip the crackers and have them looks nice was to use a crock pot, a slotted spoon, and a butter knife.

So turn your crock pot to low and dump in the chips,  as they melt stir them up.  I didn't stand watch over them since it does take a bit on the low heat setting.  Just keep checking and giving them a stir every 5 minute or so.

Once they are melted and smooth turn the crock pot to keep warm so it doesn't burn the chocolate!
Stir in the peppermint extract then get ready to dip.

Drop a cracker in the melted chocolate and used your spoon to completely coat it.  Again using your spoon pick the cracker up then use the butter knife to wipe the excess chocolate off the bottom.  Lay out on wax or parchment paper to set up.  After I did about 6 crackers I then sprinkled them with the garnish.  

I made over 100 of these in about an hour.  Perfect for a cookie exchange!

I had to pack them up and put them in the outside fridge otherwise I am pretty sure they would have been gone before the exchange!
