I'm sorry! I know some bakers are firm believers in starting from scratch this recipe isn't one of those. I love baking from scratch but sometimes my schedule doesn't allow me to do so. I run therapy groups with adolescent foster children and during some of the groups I like to bring goodies. I don't have much funding, in fact, none..so what I bring has to be economical. Its obviously not the healthiest but it makes them smile and I'll take it.

So chocolate pudding, simple and SUPER MOIST. Don't go by the directions on the box but follow the ones below

Chocolate Pudding Cupcakes

4 eggs
3/4 c water
3/4 c oil
4 oz chocolate pudding mix
box of moist chocolate cake mix

Mix for about 4 minutes or no lumps, you know. I guess theres such a thing as over mixing *shrugs* thats what my mom says.
Preheat/bake at 350 degrees
Cupcakes cook for ~21 minutes. If youre worried thats too much/not enough time, grab your toothpick or wooden skewer and check to see if it sticks.
I used ready made icing (dont give me that look) I like cream cheese flavor

I LOVE adding pudding to my cake mixes,  gives them that little something special.  And what a great thing you do bringing goodies.  It's the little things in life, right?
