I'm planning on hosting a chocolate-and-valentine-making party for some friends in February. I have a couple molds, and I'll probably buy a few more. The thing I'm stumped about is the chocolate. We'll use candy melts for small accents, but I think they taste pretty bleh. They're fine for adding stripes or something, but I don't really want to make stuff only from them.
High quality chocolate is very expensive. I'll probably have 8 people over, so that'll add up really fast. Chocolate chips are reasonable, but are there other options? I haven't decided for sure, but I think we'll mostly be doing molded chocolates and possible ganache truffles or something.

This sounds like a fun party!  I'd keep my eye out for good quality Christmas chocolate to go on sale half off or more after the holidays.  You won't care that the wrapper was red and green.

You can enhance the flavor of cheap chocolate in a variety of ways http://candy.about.com/od/workingwithchocolate/a/chocflavors.htm I find just a DROP of 1-2 oil-based extracts (Michael's probably has some) are more than sufficient to give a little depth I've even made a paste of cocoa powder and coconut oil to get some cheap "candy coating" up to better snuff. Wouldn't do ganache even with good chocolate unless there's liqueur in it, heh-heh. You can get a tiny bottle of it for $2 at the liquor store.
