This recipe was posted in the HP Craftalong but it's too good not to share. After finding the recipe in the College Vegetarian Cooking book, I threw away all my other falafel recipes. Here is the link to the actual recipe, but if it should be included in the post, let me know and I'll type it out.
Falafel Pita with Cucumber Sauce


Here's the process for making them at my house:
The tzatziki, which really should be made first and refrigerated while you're finishing the falafel:

It is sour cream, cucumbers, onions, garlic, salt, and pepper.

I don't have a potato masher to squish the chick peas to smithereens so I use a pastry blender. Do not use an electric blender because it may catch on fire.  Roll Eyes When you are done your chick peas will look like this and you will have Iron Man arms:



Then you make them into little balls and flatten them. I use a bitty scoop:



And when you assemble it all, it will stop husbands in their tracks. Make sure you double the recipe!

I confess I don't understand what a falafel IS, but why would chickpeas catch on fire with an electric mixer?

...I'm sorry, what? I always use an electric blender.

It looks delicious though, falafel is great when done right Smiley Out in town and with store bought, it's always hit and miss - usually far too dry.

Maybe I should have said not to use a 50 year old electric mixer, like I did, because there is a possibility it'll catch on fire.  Cheesy

Eating dry falafel is the worst and that was the problem with a lot of the other recipes I've tried.

Falafel are delicious.
It's far less dangerous to NOT make them from canned chickpeas. The mixture is to wet and may make the oil jumps out of the pan. I have been burned on the arm and hand that way and was only lucky to have my hair in front of my face. I've got some perfect Halloween pictures! Wink Check online, burns from falafels frying aren't rare.

I LOVE falafel and so does my hubby. It's a vegetarian dish we can both agree on Smiley. I'm definitely going to try this recipe. Yours looks SOOO good!
