The other night I was absolutely dying for some chineese food, but since I have celiac I cant do gluten. While fried rice and mai fun are made with rice which is gluten free, the soy sauce used in the recipe and the wok its fried in has gluten (well, cross contamination). Here is what came out of my experiment:

Mai Fun

package of mai fun noodles
handfull of mushrooms
3-4 stalks of bok choy
3-4 stalks celery
.5 c carrots julliened
1 c cabbage
8oz veg stock
2 Tbsp wheat-free soy sauce

Soak the noodles in water for half an hour to soften them up. Add all the veggies into a warm wok with a little bit of oil in it to lube it all up. After all the veggies start to look a bit wilty add half the veg stock, the soy sauce, and then the noodles. Stir around until well mixed and warm, serve immeaditely.

I added some ice shrimp in this batch because it was on sale but I promise I wont do it again because it tasted really shrimp-y. I would soft scramble an egg before adding the veggies to add that protein source. Also, instead of using the cabbage and carrots I was cheap and used the rest of some pre-packaged cole slaw veggies and it worked out lovely.
