Pumpkin soup is one of the best I've tried and incredibly simple to make.

For the ingredient, you need pumpkin flesh (750 g for four persons), potato (250 g), onion (spoon of oil, water and salt).

Heat the oil in the saucepan and add onion, stir a little bit and add potato. Fry it for a couple of minute, add about 1 l of water and add pumpkin . Bring it to boil, add salt, reduce heat and cover the saucepan. Simmer about 20 minutes. When the pumpkin is cooked well, blend everything with the immersion blender or kitchen tool.

Serve with cream or toasted  bread dices.

Don't know how I missed this when it was first posted. To me pumpkin is a vegetable and I hate the very idea of sweet pumpkin.  Tongue  I love butternut soup but never had a recipe for pumpkin soup till I saw this.  It looks so easy. Many thanks for the recipe.
