i hate fondant and royal icing (im not keen on marzipan on cakes either) so i just used buttercream in the center and around the sides. this style of cake does go stale quicker than one that is completely covered though  Undecided (but then it took me ad my o/h over a week and a half to devour it. if you have a few more people to help you eat it this wouldnt be a problem. covering the top and any cut sections will clingfilm helps Smiley
