Lately, we have been really eating and enjoying kale more. Came up with this recipe to use two of our favorite new veggies, kale and edamame (soybean).



Here are the ingredients you will need, and even thought it looks like a lot, it isn't. This salad takes about 10 minutes max to make.



Salad:
4 cups of cleaned and finely chopped kale. Ribs should be removed
1 can of chickpeas
1 cup of Craisins (or any dried cranberry)
1 bag of edamame
1 carrot, grated
Dressing:
3 T. lemon juice
4 T. of olive oil
1 clove of minced garlic
1 tsp. oregano
1 tsp. basil
1 T. parsley
salt and peppper to taste.

Mix dressing ingredients in small jar, and shake well. Put all salad ingredients into a bowl, pour dressing over and serve. Yum! Really tasty with grilled chicken. Enjoy!
