Long story short, back in 2010 I was chatting with a friend who said "Bacon's awesome. Cookies are awesome. Why hasn't anyone put them together?" I was on a mission. After a few failed attempts I devised a workable recipe and brought a container full of bacon cookies to said friend's Xmas party.
A strikingly handsome boy I'd never met was at that party. He happened to also have a deep appreciation for bacon. We talked all night, he ate about 10 of my cookies and after he tasted the first one, he (jokingly) proposed.
Fast forward to now: the boy and I have lived together for nearly 2 years and he still loves my cookies.
So, here's the recipe. These cookies are basically magical.Allison's Bacon Cookies
1. Take 8 slices of bacon and toss in brown sugar so both sides are thinly coated. Place on tinfoil or parchment paper and bake in a 400° oven, flipping once so both sides are dark and shiny. I left them in for about 12 minutes total - but if you like your bacon with more crunch, 15 minutes should do. When the bacon cools, chop it up and set aside. OH! and Save the fat! For god's sake, save the fat! Collect as much as you can and stick it in the freezer for now.
2. Pre-heat your oven to 350°. When the bacon fat has cooled, measure it out. Top it up with softened butter to make 1 cup in total. In a bowl add to butter/fat mixture
*1/4 cup powdered sugar
*1/4 cup granulated sugar
*2 tsp vanilla extract
Cream together until smooth. At this point, add
*1 2/3 cups flour
to the mix in small batches. Once combined, add
*2-3 tbsps of maple syrup
and throw in most of your bacon (if you want to save some for garnish - if not, throw it all in)
3. Shape into small discs and bake those puppies for 10-12 minutes, just until the edges start looking golden.
4. Just for an extra kick (because they're not unhealthy enough) I did a very thin glaze on top of the cookies. 1/3 cup sifted powdered sugar, 1 tbsp maple syrup and 2 tbsp milk mixed together until smooth and spooned over the cookies. I garnished with a piece of bacon on top and voila!
