TOmorrow is my dd's 6th bday party. I've been working hard on it for the last couple of weeks. I finally got to make the cake...my favourite part!

Here's the recipe should anyone want it!

Marshmallow Fondant

Small Batch

Ingredients:

1 cup mini marshmallows
1 tbsp water
1 ½ - 1 ¾ cup powdered sugar
Place marshmallows in a standard 1 cup measuring cup and push down and pack them in.  Place in a microwave safe bowl and add the water.  Put in microwave for about 20 seconds, just long enough for them to soften and puff up.  Take out and stir with a spoon until it is combined well.  At this point it looks kind of soupy.  Add the sugar and mix and fold until all is incorporated and is no longer sticky.  Take it out of the bowl when it gets to the point where most of the sugar is incorporated and knead by hand.  This takes roughly 5-7 minutes.

Marshmallow fondant can be rolled almost paper thin and repairs well.

Large Batch

Ingredients:

1 – 16oz bag of mini marshmallows
2 tbsps water
2 lbs powdered sugar (8 cups)
Follow same procedure as above.

TIPS

Add any flavour Lorann Oil:  Cut back on the water and add about 1/8 tsp Lorann Oil.  You may add more for the large batch or more pungent flavor.  Adjust the water amount accordingly.
Too Sticky:  Let it sit out and “air dry” for about 10 minutes.  Use a small amount of Crisco on your work surface and hands.
Dough that is not in use must be covered with plastic wrap or Ziploc bag or it will dry out.
Dried Out:  place fondant in the microwave for a few seconds to revive it.  Example:  small batch 3-5 seconds; large batch about 10 seconds.
Colouring:  Add paste colour to soupy mixture prior to mixing in flour OR knead in the colour after it has been prepared.

I'd better not show them to my kids or they'd request an adoption Tongue

My other kid's Bday is in 2 weeks and she wants a mad hatter party, so I've been trying to figure out what to do about the cake and Your fondant recipe sounds like something I could actually make! Thank You so much for sharing and for all the tips! Smiley
