This is extremely late, but this cake was so good i had to share Wink

So, two of my friends recently got a flat. A very much desired, 3-bedroom flat. Quite the level up from the 19 sq m student room they shared for months before.. So naturally, since we had champagne left over (I know, crazy) since new years' we drank champagne and ate cake the same day that they got their keys. The recipe is metric, the science geek in me despises imperial.



It's a two-layer cake (it was supposed to be three, but i f*cked up) with lemon curd and raspberry mousse covered in white chocolate mousse.

SPONGE CAKE (only used in layered cakes as it doesnt really taste anything on it's own)
4-5 eggs
2 dl sugar
1 dl potato flour
1 dl flour
2-3 teasp. baking powder
zest from a lemon (optional)

Whisk eggs and sugar until light and fluffy. Mix the flours and baking powder (and zest)in a separate bowl and gently mix into the eggs. Pour into a round (~23 cm diameter) greased pan and bake at 175C, 40-45 minutes in the lower part of your oven. Let cool and slice it in three.

RASPBERRY MOUSSE:
200 g raspberrys
2 dl quark/crme fraiche/thick yoghurt
2 dl cream, whipped

Mix raspberries and quark with the whipped cream.

WHITE CHOCOLATE MOUSSE:
2 dl quark/crme fraiche/thick yoghurt
200 g white chocolate
2 dl cream, whipped

Melt the chocolate and mix with quark/CF/yoghurt. Whip the cream and mix.

Assembly the cake in the cake pan to make sure it holds its shape. Brush the bottom layer with lemon juice, put on loads of lemon curd (i used store bought). Add second layer and brush with lemon juice. Add the raspberry mousse and finish with the last layer - you can make up to this point a few days in advance! On the day of serving the cake, coat with the white chocolate mousse

It really was delicious! And I'm sorry about the curd. It actually took me a couple of years to realise you can make it yourself, now I'm just too lazy to do it Wink
