Since it's just coffee and water, I'd imagine it would keep about as long as a simple syrup which I've kept 2-3 weeks in the fridge.  Just watch for mold inside the container lid.  Of course, you could add a little vodka to help extend the shelf life.  Grin

teag! Thank you so much for this! I grew up in a family that used to by coffee syrup by the gallon jug (it was locally produced), and we could regularly order coffee shakes at McDonald's (It was odd to leave the area and get strange looks when ordering a coffee shake at a non-local McDonald's!). It would be a dangerous thing for me to have a gallon of coffee syrup in the house, so I love that now I can make my own in smaller quantities. And, I'm guessing I could even do a decaf version!
