Been a long time gone, so thought I'd bring you a special side (or cool summer snack) as an apology.
Grandma's Cranberry Mold! (Note: Thicker than appears in photo, there were cranberries hiding in there a layer below)Do not be put off by the cranberries(honestly I don't like whole cranberries, but I love this dish and begged Granny for the recipe), this is actually a subtly sweet dish. Nobody tell Grandma I'm putting this up here, but the world must know! I have made this for Holidays and per request via Hubby. He's not a fan of cranberry sauce oddly enough, but this is just the right flavor for him.
You will want to make this the night before, it takes around 12 hours to set fully!What you need:
~A nonstick pot (a 2qt is generally the size I use)
~Wooden or plastic spoon you do not mind getting stained (It WILL get stained)
~Measuring cup (with oz markings if you have it)
~Some kind of mold with a lid or plastic wrap to cover. I have a covered casserole dish(pictured) that works wonderfully for this.
Ingredients:
~2 packs 3oz Cherry Jello (Or 1 6oz pack if you can find it. Black Cherry also works find, no fizzy/color-changing ones though)
~1 16oz can Whole Cranberry Sauce
~1 16oz can or jar Plain Apple Sauce (I have difficulty finding 16oz exact of this. 14oz will work too, or measure out 16oz)
~1 cup boiling water
* Bring 1 cup water to boiling in your pot.

Ignore the directions on the jello packaging! Dissolve the 6oz jello in the cup of boiling water, do not reduce heat.
* Stir in the whole cranberry sauce until the sauce is completely melted.
* Turn heat off and mix in apple sauce, making sure to thoroughly blend it and scrape the sides of the pot.
* Pour mixture into mold or dish. Mold should be lightly oiled (drop or two of oil smeared with a paper towel works), but dishes/bowls need not be (I have never had an issue getting it out of my casserole dish and I never oil it down).
* Allow to cool slightly before covering and placing in fridge, let set for at least 12 hours.
That's all there is to it. My husband really gets excited when he sees me tossing whole cranberry sauce into the grocery cart, he knows sometime that week he's having it. Cheap to make and provides plenty. Also Grandma wouldn't really get upset by me posting this, I just like to pick on her hehehe
