Sounds positively barfy right??! Wrong-ola, this is the moistest most wonderful chocolate cake you'll ever eat.
Here it goes:
sift together:
2 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 cup cocoa
mix together:
3/4 cup mayonnaise
1 cup sugar
add to mayo mixture:
1 cup water
1 tsp. vanilla
add wet ingredients to dry ingredients and pour into well greased and floured (or use cocoa powder to dust the pan so white flour bits don't stick to it) bundt pan
and bake at 350 degress for 35 minutes.
Cool 10 minutes and frost with simple chocoloate glaze which is
2 cups powdered sugar
1/2 cup cocoa
1/4 cup (more or less) milk
drizzle over top of cooled cake and ENJOY!

sounds amazing. Although logically mayonnaise is just oil and eggs and vinegar.  I've certainly used oil and eggs in a cake before. No vinegar but I have used lemon juice, it probably helps the raising agent.  Anyway many thanks for this recipe. I've bookmarked it.

Good point, elderflower.  Mayo contains a lot of 'regular' cake ingredients, doesn't it?  I've heard of mayonnaise cake before, thanks for posting your recipe!

that is a very good point, but it seems to turn everyone off when you there's mayo in a cake.  Didn't stop my co-workers from gobbling it up!

Hmmm - may have to try it!  It does sound "barfy" as you say, but looks delish, and I am always up for trying something new in the chocolate realm!  Thanks!  Also - love the idea of using cocoa powder instead of flour on the pans.  That is just brilliant.  Smiley
