Boy oh boy do I love funnel cakes! Here's a quick and easy recipe for ya:
2 eggs
1 1/2 cups milk
1 1/2 tsp. baking powder
2 tsp. cinnamon
1 tsp. vanilla
1/4 tsp. salt
2 cups flour
Oil for frying (I use a Fry Daddy with vegetable oil)
Mix all ingredients in large bowl and pour into a measuring cup with a spout. Heat oil to 350 degrees. Pour thin ribbons of batter into the fryer in a cross cross pattern and fry 2-3 minutes and flip and fry 2-3 minutes more.
Frying shot:

Top with powdered sugar


Top with fruit (if you wish, I used cherries)

Enjoy with a most adorable munchkin

it's SO easy to flip once it has cooked on one side.  I use two chopsticks to flip it, I push down on the bottom and when it's "popping a wheelie" I place the other chop stick behind it and pull it toward me til it flips over.

You can totally make them in a skillet with about 2 inches of oil
