So I offered to bake cupcakes for my friend's baby shower (on top of the diaper bag that I made for her), and I wound up making three dozen cupcakes for the party. Her absolute favorite of the cupcakes that I have made in the past are the Lemon Curd Cupcakes (http://www.joyofbaking.com/cupcakes/LemonCupcakes.html). We also decided to do some alcohol flavors for the other two batches, so I went with Mudslide Cupcakes (http://www.cupcakeproject.com/2010/01/mudslide-cupcakes-with-baileys-irish.html) and Coconut Rum Chocolate Cupcakes (http://www.cupcakeproject.com/2011/02/chocolate-coconut-rum-cupcakes-and.html). To make the cupcakes match the party/nursery theme, I used coral, brown, and teal cupcakes liners, and I made coral, teal, and white candy shells to top them.

Here were some of the cupcakes ready to be consumed at the party:

And some of my decorating shots (I didn't get the greatest photos at home...):

Coconut Rum:

Lemon Curd:

Mudslide: (before I put the shells on)

I also made the Lemon Curd Cupcakes a few weeks ago while a friend was in town, and just decorated with a lemon slice:

I made the nifty little flavor signs for the party with vintage beach images that I found here: http://vintageprintable.com/wordpress/

I don't usually get too dazzled by cupcakes..so many are dry and overly sweet. But yours look DELICIOUS! I love the decorations!!! Your friend is really lucky to have you!

Ohhhh, the shells are such a sweet detail! Very pretty presentation.

I love lemon curd! Even after making it from scratch once and realizing what ingredients actually go in. But isn't that what elliptical machines were made for? Lol!

Thanks everyone!

Which was your favorite?

Mudslide was my favorite, but a lot of people liked the coconut rum best, and the mommy-to-be still loves the lemon the most. The candy shells were soooo easy and I wish I always knew that because I would have been doing them years ago Tongue

so many are dry and overly sweet.

I have found that recipes that use honey instead of sugar are sooo much moister (did that for my wedding).

That's a great idea! I try to cut back on sugar anyway. Thanks!
