Yummy chocolate peanut butter protein pancakes layered with creamy bananas! Smiley  You could even omit the protein powder and just make more traditional pancakes.

Ingredients:
5 egg whites
1 scoop protein powder (I used Trutein Chocolate Peanut Butter cup)
1/2 c oats or oat flour (I put 1/2 c oats into a Ninja blender)
1/2 t vanilla (I used homemade rum/vodka vanilla, YUM)
Sweetener (I used 1 pack Stevia in the Raw)
Fruit, if desired (bananas paired well with the choco peanut butter protein)

Steps:
Whip egg whites and vanilla until peaks form.

In a dry bowl, stir oat flour, protein powder and sweetener.

Gently mix dry combination into egg whites.

Using 1/4 c, portion pancakes onto medium-high heat nonstick pan.  Protein pancakes don't spread like traditional pancakes, so spread with spatula to desired thickness.

Cook until golden on both sides, flipping once.

Garnish with fruit, if desired.  I layered mine with a mashed banana whipped with a bit of skim milk to make it creamy and fluffy.  Sprinkled with cinnamon.  The entire dish tasted like a chocolate banana cream pie.  Eep!

Put in your belly. Smiley

Inspired by my favorite yummy protein, Trutein!

I wonder if your protein powder retains its nutrition after being heated like that. Heat kills, but alas, we love our hot food! I only put it out there 'cuz my protein powder is pretty expensive and I hate to think I'd be burning away my money along with the nutrients.

I've always wondered the same, but all of my body building forums and my trainer have never cautioned me against it, so I just go with it. Cheesy
