Easy peasy breakfast stackers! Smiley

Ingredients:
1 English muffin (I used the whole wheat variety)
1 Hard cooked egg, sliced
1 Wedge Laughing Cow cheese (I used Swiss)
Tomato, sliced (I used Roma)
No Salt (This is a sodium substitute, but you can use regular ole salt, if you wish)
Oregano
Cheese for garnish (I used FF American)

Steps:

Preheat broiler

Toast English muffin

Spread Laughing Cow cheese on each half of the English muffin

Layer tomato slices, hard cooked eggs and cheese garnish on English muffin

Season with salt, oregano and cheese

Broil just until cheese melts and edges of English muffin begin to change color

Put in your belly Smiley

Yep!  They are these little wedges of snack cheeses.  I think they are popular because they don't have a ton of calories for a flavorful cheese snack (35 per wedge).  I use them on everything from whisking with milk for salad dressing to sandwiches. http://www.thelaughingcow.com/products/light-swiss-original/
