It's cold here, and I was craving a hot, spicy soup. I needed to use what was on hand, so I created a tasty vegetarian pozole. It was delicious, and I will definitely be making it again! I used hot jalapenos, hot rotel tomatoes, and and a bit of extra chilis to make it spicy, but you can calibrate by using hotter or milder peppers, etc. You can also add meat and use meat broth if you are so inclined. I like it topped with pepper jack cheese, plenty of chopped cilantro, and a nice cooling dollop of sour cream.





Vegetarian Pozole


1 onion, chopped
olive oil
2 Cloves garlic
1 Package sliced mushrooms
1 bell pepper, chopped
1/2Box of vegetable stock (or meat if you prefer)   
1 Can diced tomatoes
1 can diced jalapenos, drained   
1 Large can hominy, drained
3 tsp cumin or more to taste
Grated black pepper to taste
Handful chopped cilantro to taste
Optional sour cream, cilantro, grated cheese for toppings

Sautee the onion in olive oil until clear.
Add chopped pepper and mushrooms and continue to sautee until ready.
Add garlic and sautee 1 more min.
 Add broth and deglaze the pot.
 Add tomatoes, jalapenos, hominy, cumin, and pepper. Simmer until                                                         hot.Add cilantro and stir.
Serve with toppings of your choice.

Did you use hominy or chickpeas?  It looks delicious!  I made this without the benefit of your picture when you gave me the recipe, so I had no idea what it was suppose to look like! Cheesy  But it was yummy!!!

phew--I thought you said to use hominy!  I thought I read the first recipe incorrectly....now to see if mine looks like yours! (ha)
