I've been putting avocado on everything since I started living in California. Favorites:

We live in an avocado farming area, so I've had lots of opportunities to experiment.  I like avocado on toast with salt & pepper.  You can mix it with goat's cheese, seasoning and lemon juice to make a delicious dip or sandwich spread.  A really yummy pasta dish  - chopped avocado, garlic, lemon pepper, shaved parmesan and some good olive oil.  Avocado is lovely with chicken on wholemeal (wholewheat) bread.

My favourite easy recipe with avocado (not vegan) is an egg baked in an avocado:

Cut avocado in half, remove pit and dig a slightly bigger hole; place in a small baking dish (just so it doesn't tip over). Break an egg in the hole, top with some grated cheese and bake at 475 about 13 minutes (cooking time may vary slightly depending on your oven and on how cooked you like your yolk). Voilà, grab a fork or spoon and dig in!

Avocado Brownies - one of my favorite avocado recipe. I found the recipe of Avocado chocolate Brownies on internet and tried at home and omg I don't believe it turned so delicious. My kid just loved it. I am not a chef, but rather you can call me a foodie who loves to explore home cooking in weekends.
