Healthy Eats-Along 2013

I've heard you need to rinse them really, really well. I bought some once but wussed out and never ate them, just threw it away lol! They carry them at Safeway near me (or used to). I'd love to hear how they turn out, keep us updated!

Mine were like an udon noodle mostly.  We would use them for stir fry, and in soups.  My HUb is the cook, and he tends to just wing things, so no recipes.

I have that recipe on my list to try, sweets! Maybe I'll add it to my dinner plan for next week.

I gave the miracle noodles a go!

They smell like rotting fish when you first open them but I rinsed them in a strainer for ~20 seconds and that made them less stinky. I then boiled them for about 1 minute, removed them to a paper towel and patted dry, as their site recommends. Without any sauce, they taste like slimy air .

I sautéed some garlic, ginger, carrots, green onions, red cabbage and sesame seeds and added that to the noodles. I tossed it all in a sauce I made from soy, white wine vinegar, a little hoisin and a squirt of sriracca.

It wasn't exactly the same as vermicelli noodles but a great substitute considering they have 0 calories! I think they would be good in other Asian recipes but I can't imagine cooking any Italian style pasta dishes with them.

*snort* slimy air *snort*.  You made me have a flash back LimR.  I remembered wondering if that was what slugs would be textured like when I first ate konnyacku.  Yeah, I never tried them with Italian fair.  I used to use them in TomYum (sweet {tamarind}and sour soup...Vietnam I think?) with Costco wild salmon patties and that was yummy

My goal is to get rid of at least 90% of processed "food like stuff", and make sure we eat "real food".  Full fat dairy (and raw when I can get it), garden grown produce and more farmers market shopping, learn to effectively ferment, and eat healthy fats.
