I may have been nudged by sweets

Right now my goals are to eat less/no sugar, lower carb, and lots more vegetables! I made a killer mushroom soup the other day, a giant bowl was like 200 calories and it had cream and butter in it!

Yea - this is great!  Over the past year I've made it my goal to eliminate processed foods, and I buy almost all organic/non GMO.  It's a lot tougher but the results are always tastier!!  Can't wait to see some good recipes and throw in a few myself!

Oh, yeah!  I've been trying to do that too!  Some things I don't bother with organic, but for the most part I try to make sure what we are eating is good.  We haven't eaten hamburger helper in years now!  It use to make us feel so terrible!  Now I generally make us a big dinner on sunday night with enough leftovers for lunches for the week.

I'm trying to eat more fruits, veggies, and whole grains.  As well as continue down the path of eliminating processed foods. 

I made an awesome soup, that was very healthy and SUPER delicious, for my lunches last week.  It was a broccoli cheddar soup.  Mmm mmm!  Also, it was a very fast soup to make!  Probably the fastest I've ever made!

One serving is 230 calories.  Not bad!  And it doesn't taste all diety.  Even with the fat-free condensed milk.

I've been making Kale chips with my two year old.
Kale
1 T olive oil
Salt.
Preheat over to 275. Wash one large bunch of Kale. Dry it as much as you can- I use a spinner. Have you or your two year old rip the kale leaves off their woody stems. If you have a kid in the fascinated-with-tearing-paper phase they will really like this part. Put the kale on a baking sheet. Drizzle olive oil over the kale-- I use less than a table spoon. Have your two year old play with the Kale until the Kale is covered evenly with the oil. Then lightly salt the Kale. Bake for 30-40 minutes in the middle shelf of your oven- stirring the Kale half-way through. The kale will be thin and crispy. It tastes a bit like a potato crisp.


I am also using my slowcooker to make low fat bean vegetable curries. Fill the slow cooker just before bed or work and in 8 hours you have a health curry or stew. The bonus is that I am using the slowcooker to heat my green house on the days that I cook so my salad greens don't freeze.

I most definitely fell off the wagon in the last part of last year, so yes, Thanks.  I have been thinking a lot about eating better.  It will be nice to have some motivation to do more then just think about it

I had a apple, ginger, cranberry juice, celery, chai seed, and hemp hearts gloopy (often called a smoothie, but they seem gloopier than smooth for me) for lunch today

Dinner is honey & citrus glazed (honey, lemon & orange juice) baked chicken, side of rice, side of broccoli

Might finish off our pan of black bean brownies this evening and split one with the boys.  Top with some crushed strawberries?
