Yesterday, after a brunch at the home of friends, I didn't want to drive home in the snowstorm, so I stayed over. The parents had a neighborhood party to attend, so I hung out with their daughters. We had been challenged to make something using the extra pie crust (and even some thawed puff pastry), so their daughter Bella and I searched for ideas. Inspired by this recipe for Irish Potato Pie, we came up with a slightly modified version. Because of the storm, we were limited to what was on hand. We used the pre-baked pie crust instead of the puff pastry it called for, red onion instead of yellow, several smaller potatoes, and only 6 slices of bacon. Plus, we didn't have any dill, so we substituted rosemary. We had to bake it a lot longer than it called for, but it was quite tasty, and I'll make it again.

Then, for dessert, we came up with a peanut butter, chocolate chip, and marshmallow filling for the puff pastry, which Bella assembled.





I forgot to take a picture of it finished, but it was delicious!

Thanks! Can't go wrong with potatoes, bacon, and rosemary! I might have to try it again with the dill to see which one I like more. I'm not sure about bacon and dill...
