Meatball Sub Casserole

Verdict:  Yummy! If you like meatball subs, you'll love this. It was super good. The only thing I did different was use 2 lbs of meatballs instead of 1 lb. With the pan size it called for 1 lb wouldn't have been enough.

The chickpea lime cake actually does sound good to me...I love chick peas!

Hawaiian Ham and Swiss My husband doesn't even like Swiss cheese but this was a super success. So good! I ate a 1/3 of it myself. ON NOM NOM!

Creamy Shrimp enchiladas Super good, if you like shrimp.

Orange Grilled Salmon Good, grilled with some asparagus that I had drizzled some grape seed oil and Italian Blend on. Oh, that asparagus was really good. Best part of the meal, but then again I'm not really much of a fishy girl.

Thanks Jexxican...I am going to make those Hawaiian Ham and Swiss sandwiches for dinner tomorrow!  I am struggling to find easy and fast things to make that my mom might like!  She loves that bread and ham...I will have to see if she likes the swiss cheese.. Cheesy

Alwaysinmyroom, it sure was fast and easy. We LOVED it. It's got a lot of butter, though, and if you want it all melty then I would suggest keeping it in the oven a little longer than 15 minutes, mine was mostly just melty around the sides. But definitely check it at 15 minutes to see if it's warm enough.

I tried that meatball-sub casserole last night. It was like a lasagna with bread instead of noodles. It wasn't bad, we'll have it for dinner tonight because the whole "4 servings" thing was a joke, but I don't think I'd order it again.

EASY PIEROGI CASSEROLE

Verdict: My husband loved it, my kids hated it, and I felt that loaded mashed potatoes would take less work and basically taste the same.


Peanut Butter Chocolate Chip Dessert Humus

Verdict: Really really yummy. It tastes like cookie dough. And the best part my kids gobbled it up and the basis of it is chickpeas. Great way to trick them into eating beans.
