Well, I guess I missed all the challenges, but that's ok.  I've been very busy anyway.

Fresh picked this morning from the garden. 
Strawberries.  I'm picking this many about every three days now.  What we don't eat is going into the freezer.  Five pints, so far.



Red onions and lemon cucumbers.  These are getting jarred up into sweet pickles.  The exhibitor tag was from the county fair.  The onions were picked a couple of weeks ago, for the fair, but I pulled up the rest of them this morning for storage.





We also canned peaches.  What a chore these were!  I've never done peaches before, so I'm quite proud of these.

Great looking produce! Canning has never been one of my favorite things, too messy, too hot, boiling water, pressure cookers or hot water baths, and mainly done in the summer when the temperatures and humidity are already making life miserable. More power to you for tackling the job! BTW, the peaches look scrumptious.

We do most of our canning in an outdoor kitchen.  Not exactly FDA approved, but since we don't sell what we can and we go by the guidelines otherwise, it works.  It's not too messy if you have all the right equipment, and except for the peaches, most of it goes pretty fast.  The peaches took us about three hours.  The pickles go into a crock for two hours, then you just stuff them into hot jars, seal them and water bath for 15 minutes.  Easy peasy.  Tomatoes are even easier.  You flash freeze them, stick them under hot water to get the peels off and stuff them into jars.  Nothing is easier.

My strawberry plants all died this summer while I was on vacation. My husband decided not to water them since he thought they were going to die anyway. So, your strawberries look even more tempting. As far as onions, mine were so tiny, they could have been cherries! Well, I do have lots of coconuts. If only I knew how to open them easily...
