I tried the bean meat ball recipe last night (or bean balls as they were termed by my BIL). The veg BIL loved them, I enjoyed them, the meat-lover hubby thought they were alright. So, not a total home run. We had meatball subs with them, so I think that helped a bit.

I'll probably make them again, but they won't become part of the regular rotation.

Hi all!

I'm gonna add in on this thread after reading the last few pages. I am striving to be vegan (mostly so, with about once weekly breaks for egg/dairy or meat-due to lack of choice at my boyfriend's house or eating out) and my man is so not.

But he likes tofu and is not against me going veg. He likes Thai food and the way they make tofu crispy on the outside (probably oil frying). He also likes veggie burgers and he tried the fake meatballs today.

I can't finangle him to try lentil sloppy joes yet.....I'm working on it.

He also likes a lot of Indian foods so it's easy to sell him on chana masala or other veggie dishes that way.

It seems like the more spicy, the less meat lack-age is a problem.

I've made these Colombian-style empanadas on a couple occasions (so delicious) using potatoes instead of the ground beef/pork (you can also add some peas samosa-style).


The spicy aji is a MUST!


My husband LOVES them and he's also a big Thai/Indian food fan.

I'm not a vegetarian but I don't like a ton of meat and my husband likes it morning noon and night. So I'm mostly vegetarian for breakfast and lunch and then we share dinner.

One idea that comes to mind is spaghetti with meatballs and mock meatballs on the side so you can each eat what you prefer.

Another is burgers or things on the grill in general. When my husband wants steak for the umpteenth time, I'll have him grill me chicken (although you could do veggie burgers). Sides can all be vegetarian.

My husband generally cooks the meat because I am so bad at it. Smiley. I generally do sides because my husband will add bacon or ground meat to EVERYTHING and it's just too much for me. Smiley

I am collecting cotton Hawaiian fabric scraps for a quilt if you wanted to send any my way!
