My friend recently found out he is diabetic and by cutting grains completely from his diet has improved drastically.  Yay!  But my dilemma is that I was going to make him cookies, but shouldn't now.  Any ideas?  Oh, and I also need to make them by Wednesday night.  Help please!

Have you tried looking low-carb diet desserts? They tend to cut out things like white flour and sugar. Oh, and I found a recipe for chick pea chocolate chip cookies:

It's not as weird as it sounds, unseasoned chick peas have a very mild flavour and grainy texture. A lot like potatoes, actually! Just be sure to use dark chocolate without sugar.
