I made this delicious candy for Christmas last year. My family loves sweets, especially my dad, so the fact that the recipe makes so much was very appealing. Sadly, it rained the day I made them and the candy didn't get firm so it had to be eaten with a spoon. They still tasted good though Cheesy
There's one missing in the photo because my dad took it.



TURTLES
2 c. light corn syrup
2 c. sugar
1 stick butter
2 c. whipping cream
half-can sweetened condensed milk
1 lb. pecan halves
1 lb. dipping chocolate, melted

Combine sugar and corn syrup in a covered saucepan. Bring to boil and let cook for 2 minutes. Add butter and stir until the butter melts. Combine cream and condensed milk in double boiler. Cook over hot water until heated through. DO NOT BOIL IT! Add to the corn syrup mixture 2 tablespoons at a time, mixing thoroughly after each addition. Cook to 230 to 240 degrees on a candy thermometer, soft-ball stage. Arrange pecan halves in pairs on a buttered platter. Spoon the candy mixture over each pair 1 tablespoon at a time. Allow to stand until firm. Coat with the melted chocolate.
Yield: approx. 5lbs.

Can't you put them in the fridge or freezer?

We tried that: as soon as someone picked one up, the heat of their hand would make it start to melt.

I see there is no glue in the recipe, so you should try egg whites and or cornstarch.

I know someone who made them from the same recipe and they turned out better because she made them in fair weather.
