My husband made pierogis last week, home made dough and filling!
They were so good that we are planning to make more just to freeze for the holidays.

Has anyone tried freezing lentil soup? I made a pot on Sunday, and they just kept on multiplying
Honestly, I knew there would be a lot, but I didn't know it would be that THICK.

This weekend I made the most immense curry! That which wasn't guzzled by hungry hoards was divided up and frozen, all except the carrot & grape salad, which I am glad to say has survived it's 3 day sojourn in the fridge whilst still remaining crisp. The only thing I discarded was the rice.

Yesterday, my husband found whole chickens at a good price while grocery shopping. He picked up two and smoked them. Dinner last night was smoked chicken w/ roast potatoes and corn. I picked the remaining meat off of the carcasses. He reserved a couple of cups of meat for chicken pot pie (tonight's dinner) and still had enough to turn into a large container of chicken salad for lunches this week.
He also made 2 gallons of stock from the bones.
I love my husband!

Yum! Great job T's hubby! Chicken salad sounds really yummy.
I made a bunch of meatballs today, and then my brother ended up not coming over for dinner and the kids wouldn't eat any, so I guess that's more to freeze!

Arrgh! All that bulk cooking is coming back to bite me. The freezer is on the blitz, so we're now eating everything we can out of it, so we can get it sorted out. After a week and a half I still can't get everything into our cool boxes so we can defrost it. Another week of freezer meals for breakfast lunch and tea before we can sort it. And then some frantic cooking and freezing in time for Christmas, so long as I can sort out the freezer. Bah! Humbug.

I love bulk cooking and I'm learning from the prior 14 pages. My husband works from home and sometimes doesn't even have time to get his toast out of the toaster to eat it, so he always asks for frozen chicken patties from the store. I keep trying to find things for him on top of my soups. Cuban sandwiches are awesome! pork, cheese and ham partially cooked and wrapped in aluminum foil that are ready to be reheated in the toaster oven.
