Just posted this new recipe on my site. Been really diggin' the mini healthy cakes lately! You can omit the cashew cream if you want to lower the calories. You can make it in the microwave or in the oven.



Ingredients for Mini Carob Cake
3 tbs carob powder
1 tbs coconut flour
2 tbs gluten free all purpose flour
1 packet (1.8g) xylitol or stevia (natural sweetener)
1 tsp cane sugar / date sugar / coconut sugar
pinch sea salt
tsp egg replacer / baking powder
1 tbs carob chips (optional)
tsp vanilla extract
113g unsweetened apple sauce (or around 4 tbs)
3 tbs unsweetened almond milk

Erf.. now I want to eat this, but it's all gone. ;\ I also made one with a chocolate mousse on top instead of the cashew cream, but I don't have that recipe posted yet. Smiley

Aw, why thank you! It's really easy to make - I'm no expert at cake-making or making desserts look that pretty, so if I can do it, anyone can. Smiley
