I must say Thank you to Pinterest for bringing this super simple recipe to my attention.  The pin says you can make a healthier cake or cupcakes with only 3 ingredients!  All you  need is a cake mix of your choosing and combine it with 1 cup plain greek yogurt and 1 cup of water.  Bake as directed on the cake mix box and you're done!  I was a bit leery of this but decided to give it a go and to my surprise it worked just fine! 

They didn't taste exactly like a normal cupcake but they passed the most important taste test...


The kids ate them right up with no complaint.  From this day forward all cakes and cupcakes will be made using this method!

That sounds yummy, but I bet if you used flavored Greek yogurt it would make it even cooler, well, depending on the flavor you used. And Yay! Pinterest!

I bet the flavored yogurt would work well with a plain white cake mix.  I may have to give that a shot!

My daughter The Preciouss is gluten/dairy/egg free and we often make "cake" with a g/f cake mix and a can of pumpkin or applesauce. Very easy and it tastes great. Works with regular cake mix, of course.
