These are very high in protein, fibre, and iron. They are also low in sugar, contain no added fat, and can be made gluten-free if you use the appropriate oats. They are also incredibly easy to make! You cannot in any way taste the secret ingredient (even raw).


SUPERCHARGED OATMEAL COOKIES
Yield: 42 cookies (with 1 add-in)
Time to make: 10 minutes
Baking time: 12-15 minutes

INGREDIENTS:
  • 1 (540ml/19fl.oz) can chickpeas, drained and rinsed
  • 2 eggs
  • 1/4 cup unrefined sugar
  • 2 (1g) packets stevia powder
  • 1/4 cup molasses (used black-strap for iron content)
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 cups oats
Optional add-ins:
  • 1/2 cup chocolate chips (use dark for antioxidants)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

DIRECTIONS:
1. In food processor, combine chickpeas, eggs, sugar, stevia, molasses, cinnamon, and vanilla; process until smooth.
2. Add baking powder, baking soda, and oats; pulse until combined.
3. Fold in any add-ins.
4. Preheat oven to 350F.
5. Roll into 1-inch balls and place on lined baking sheet; flatten slightly with a fork (dip in cold water occasionally to prevent sticking).
6. Bake on top rack 12-15 minutes - until they start to brown but are still soft; cool on rack.

How did you know I was planning on baking tonight?  Smiley I'm new to the gluten free lifestyle too so I'm always looking for new things to try. These look fantastic! Thanks for sharing!

it's a shame i already did my cooking today...i made banana bread, granola bars and roasted veggie soup so if i made this too it'd be too much to have around the house lol...Ill have to make these next week since i already have everything i need to make them. I think ill add ground flax seeds to them as well...since molasses is in them, i bet they would taste like gingerbread if you add cinnamon and all-spice....or fresh ginger.

I'd love for you to give me your comments once you've tried them, I'm always looking to better my original recipes (or any recipe for that matter).

Mmm, fresh ginger! Flax seed would work well in this recipe.

I made these the other night and they were a hit at my house- even with my 4-year-old Smiley

I didn't use molasses because I realized my bottle was pretty ancient, so better to be safe than sorry I tossed it (but will get a bottle next time I'm out to try these again!) I substituted maple syrup instead. I also added about 1/4 C ground flax, a few dashes of ginger, and used dark chocolate chips and chopped walnuts... this seems like the kind of recipe that you can really switch it up and play around with and get yummy results! Hmmm, maybe even some peanut butter next time Smiley

It's a sweetener (like a sugar substitute) that comes from a plant (I think it's actually the stevia plant), I didn't use it in my batches and I thought they were sweet enough (I don't like super sweet stuff anyways though)  Smiley
