Fixed my favorite meatloaf last weekend. Bacon wrapped meatloaf stuffed with cheese. I used a bacon weave to wrap the meatloaf. If you have not tried making a bacon weave it is pretty easy. It does a real good job of trapping in all the moister and flavor, making for a juicy meatloaf.

Here are some pics.








Bacon weave

To make a bacon weave you need a pound of thin sliced bacon.


Lay down 7 or 8 slices of bacon side-by-side, until you have a square of bacon on top of some aluminum foil.


Fold alternating slices of bacon in half length wise, then lay a slice of bacon across the alternating slices of bacon next to the fold.


Just keep repeating.


You should have a square of bacon that looks something like this.


Loaf pan lined with bacon weave


Then stuff.


When your done it should look something like this.

The meatloaf turned out great! It was nice and juicy with gooey cheese running all throughout. Plus it had that great bacony flavor!

Why not? I'm sure many hikers would be jealous! I might go for a Swiss army knife instead of the Indiana Jones' blade though.

Ah ah, I couldn't wait until a long hike day. I just made it yesterday. (but I did a 3 hours training walk for the marathon) I baked it in the oven. My husband put a tray of cubed oiled potatoes in the oven at the same time.

Husband, daughter, son, and me of course, we all loved it.





Following your advice, I put a slice in a hamburger bun this morning for my son's lunchbox. He found it delicious.

I made it, too! Though I didn't take pictures. I think we were in a rush, though, and it wasn't completely done so it wasn't that great, but the next day I pan grilled it in slices and it was AWESOME! I think I have a slice left, I might try it as a sandwich today. OM NOM NOM! Thanks again for the recipe!

My husband says if I use less onions then it would be a lot better, but I don't think they detracted from it at all. I used to not like onions either but I wanted to like them so now I do! So he can just suck it!

yoopidou, can you tell the oven settings you use and how long it took to cook??
I totally want to make this for my family, but after my last cooking attempt, i'm not allowed to use the grill anymore.
