OH!!! This has NEVER happened to me before, I used to make jam all the time, but haven't done it in years, but this time all my fruit rose to the top and the bottom is pretty well clear. Its settled a bit but not fully. Will it settle more? and why did it do that??
that happened to me the first time this year too! I used a new pectin (Pomona) which I like cause you can go way easy on the sugar. When I researched the seperation, apparently I should have let it sit in the pot for a few minutes before putting it in the jars. Or if you notice it right after you take your jam out of the canner you can do this complicated sounding fix-a few minutes upside down, then right side up then upside down again. But in any case the jam is fine, just mix it up when you open it and it doesn't seperate again
This is a great thread, I'm getting lots of good ideas (cauliflower rice!!) I try to cook in bulk but with a hubby who likes to take a hot meal for work, 1 teenager and 1 twenty year old who eats like 3 people its hard to have leftovers for an extra meal
