I haven't made this stew in ages! I've been sort of under the weather this weekend and really wanted something to warm me up and make me feel better. It worked! Cheesy

Curried Potato and Lentil Stew

http://i303.photobucket.com/albums/nn159/bajita42/IMG_1931.jpg

Ingredients

1 cup lentils - I'm using brown here but yellow will work.

2 cups potatoes, diced

1 carrot, diced

2 stalks celery, diced

1/2 onion, diced

1 TBSP vegetable oil

~3 cups vegetable stock/bouillon - I had bouillon cubes on hand.

1TSP garlic minced - not pictured

1TSP curry powder

1/2 TSP cumin powder - not pictured

salt and pepper to taste

1. Add carrots, celery and onion to large pot. Sautee with vegetable oil until the onions are almost translucent.

2. Add lentils, potatoes and stock to the pot. Bring to a boil, stirring occasionally.

3. Add garlic, curry powder and cumin.

4. Reduce to simmer over medium-low heat. Cook until the lentils are tender which is around 20-30 minutes. Add/adjust salt and pepper at the end, especially if you used bouillon cubes which tend to be a bit salty on their own.

You can totally switch up the vegetables in this dish to better suit your tastes or the constraints of your cupboard. I used red potatoes because I like the fact that they don't turn to mush like a brown potato can. I've also added bits of turkey sausage to this dish and it was just as yummy!

I particularly love this stew with a good piece of hearty bread or nan! Soooo good!
