I've made chocolate avocado pudding for a long time, but this one takes the cake (foodie pun intended!).  It's so smooth & fluffy and doesn't have any "avocado twang" as I call it.  No funky aftertaste. Wink

Ingredients
2 avocados
3/4 c unsweetened vanilla almond milk
1/4 c honey
Palm full of shredded coconut (optional)
Palm full of chopped macadamia nuts (optional)

Steps
Blend avocados, almond milk and honey until beautifully smooth.  There should be no bumps in it at all!

In a small frying pan, toast coconut and macadamia nuts until golden brown.  Keep a close eye on them, so they don't burn.

Pour pudding into serving dishes and top with coconut and mac nut mixture.

Put in your belly.

Be happy. Smiley

yum! How did you know that I just bought 4 avocados with the intent to pudding them up? I was thinking chocolate but this sounds great!
