I am one of those odd people who eats pumpkin only around Thanksgiving. I could eat it all the time! When I came across the idea of making a pumpkin pie overnight oatmeal, I knew that I had to give it a try. Cheesy

**This makes 1 serving!**

1/2 c old fashioned oats
1/3 c milk
1/3 c. plain yogurt
3 rounded TBSP pumpkin puree (not pumpkin pie filling!)
3 TBSP brown sugar
1 TSP vanilla extract
1/2TSP pumpkin pie spice

Mix all ingredients in a bowl, cover and allow to sit in the refrigerator for at least 2-3 hours. Thats it!

I topped mine with sliced bananas and chopped pecans. YUM!  Im thinking drained pineapple chunks would also be tasty.
