I did a search and couldn't find a thread about this. The school I work at had tons of leftover bananas from lunch, and we all got some. I have 50 at least. What should I do with them? So far I have chocolate banana muffins and the frozen banana ice cream thing. I am not a huge fan of plain banana bread, but if you have some awesome addition ideas for bread I'd love to hear them!

I also have 11 pints each of cooked corn and carrots from the same source. I would love ideas for them too. I have very limited freezer space, so this gets complicated.

For the carrots and corn, why don't you make soup? They're fairly neutral veggies, should go well in a lot of recipes.

Bananas, hmm... Lots of smoothies, of course.

Chocolate chips in the banana bread with a drizzle of chocolate on top!

A friend gave me a jar of banana jam.  Seriously, banana jam!  I had never heard of it before but it is now on my list of favorites.  It has the consistency of apple butter, with a slight aftertaste of lemon juice.  I'm sure there are recipes out there that could make use of your stash.

Dried banana chips?  I wonder if this could be done in the oven (unless you have a dehydrator).
Bananas foster?  Pudding?  Just tossing out some ideas here.. Cheesy

I will have to try that banana jam.  That and some peanut butter on toast...
