I like to make food that is not only yummy, but fun to look at too. Two of my favorite things to make are meatloaf and cupcakes. So here is my recipe for meat and potato cakes!

Ingredients:



For the "cake"
1.5 lb of ground beef (I use 93/7)
1 egg
garlic powder
onion powder
salt and pepper
2 tablespoons steak sauce (I use A1)

For the "frosting"
about 2lbs red potatoes
milk
butter, 1 stick
salt and pepper

cherry tomatoes


Preheat oven to 350 degrees.

Mix egg, spices (there are no measurements for these. Basically whatever suits your taste.), A1, and beef in a bowl until well combined. Take a baseball sized piece of the mixture and put it into one of the voids in a muffin tin. Do this with the rest of the meat. I ended up with 7 "cakes". Once you oven is ready, place tin in the oven and bake for 45 minutes. It should look like this:

Next, peel and quarter your potatoes. Put them in a pot with just enough water to cover and set to boil.


Boil potatoes for about 15 minutes or until fork tender. Drain well! Place them back in the pot adding the stick of butter, salt and pepper to taste, and just enough milk to add creaminess. Too much milk and yo have soup! You do not want that Tongue. Take your hand mixer (or immersion blender if you're fancy) and whip those potatoes!


Now take a piping bag with an M tip and fill it with mashed potatoes. Add a pretty swirl on top of your meat cake and garnish with a cherry tomato.


Pair this with your favorite green veggie and you'll have a well balanced meal that any picky husband or kid will love!

EEEEK! SO cute-looking and sooo yummy-looking! And genius using a piping bag and cake tip for the "frosting". I would TOTALLY do them as an April's fool joke though. Epic!

How's the clean-up for the muffin pans with the magical meat loaf in there? I bet it's not too bad. I just noticed that this was meat and potatoes! Highly cool.

Clean up is easy as long as you wash the pan after it's cooled down, but not left overnight.
