Breakfast Pudding

A while back, I began finding recipes for raw chocolate pudding, made with avocado. I was intrigued and gave it a try. It was ok, but, as  I do, I started modifying it to suit my taste. Over time, it morphed into the recipe below. I must point out that I do not follow a raw food diet, so my changes to the original recipes are not strictly raw ingredients. I like to portion it into small mason jars and keep in the fridge for a quick, yummy breakfast. It's not exactly "health food" but it's filling and contains protein, omega-3 fatty acids, potassium, antioxidants and other good stuff. The batch I made for the photos is a double batch ...

Breakfast Pudding

1 medium, ripe avocado
1 medium, ripe banana
1/4 cup milk (I use 2%, but you can use any kind, even soy/almond/coconut)
1/4 cup unsweetened cocoa powder
2 Tbsp. raw honey
2 Tbsp. Nutella (optional)

If you have a decent blender, you can make it in there. My blender will not blend anything more solid than ice cream, so I use my immersion blender. Blend together the avocado, banana and milk until smooth. Add the cocoa powder, honey and Nutella and blend until combined, creamy and smooth. Portion in what ever kind of container or serving size you would like and chill for at least 1 hour.

As usual, I forgot to start taking pics until I was almost finished - argh! The first pic is the blended avocado, banana, milk and cocoa. As I mentioned earlier, I like to portion mine in small mason jars so I can grab and go. Enjoy!

Oi, that does sound good.

Does the avocado flavour come through?  (I hate avocado, but this sounds like a nummy enough breakfast as it is!)

No, it doesn't come through in the manner you would think of. The avocado is a fruit, but can be used as a "vegetable'" in forms of say salad, or guacomole etc. There are so many things you can do with them, it is sort of unreal. I've made chocolate mousse before and this is basically the same thing, but I never have added nutella before. I think I must try that for my teenager who wishes she could swim in it. LOL Thanks for sharing the recipe.

Oooh, delicious!  I've had avocado chocolate pudding, but not this concoction of it.  I love your jar lids, too.  I need some of those!

I've added to my shopping list so I can try this.  I think Nutella has crack or something in it because my sister is the same way!

I am actually eating a jar right now . I love my jar lids, I use mason jars for storage all the time and the plastic lids don't get rusty in the dishwasher like the canning lids. Like Radmom said, you do not taste the avocado, but it gives it a wonderfully creamy texture and they are a nutritional powerhouse. And, yes, I believe that Nutella does have crack in it!
