Inspired by the recipe posted at Oh She Glows (http://ohsheglows.com/2011/02/20/detox-blonde-macaroons/ )  I made my own Detox Macaroons!  With the psyllium husk, there is a lot of fibre in these babies!



Ingredients
1 cup of coconut butter or 2 2/3 cups of shredded unsweetened coconut to make your own
        **3 tbsp coconut oil (if making your own coconut butter)
        ** other oil as needed
1 1/4 cup shredded unsweetened coconut
1/3 cup psyllium husk
1/2 tsp sea salt
1 tsp vanilla extract
1/2 tsp almond extract
1/4 tsp anise extract
2/3 cup maple syrup
1/3 cup agave nectar

Directions
*To make coconut butter: apparently this is supposed to just use one ingredient--the coconut.  However, I cannot get my food processor to churn out coconut butter using solely that.  This may be because the coconut is dried out more than "normal" or the fact that my food processor only has one speed (or a combo of both).
1. Place the coconut in your food processor, adding the coconut oil.  Turn on the machine and let it process!
2. Scrape down the sides as needed, and add more oil if necessary, 1 tsp at a time.  You CAN use only coconut oil for this, but as it is pricey, I like to mix it with other kinds.
3. Within 7-10 minutes you should have coconut butter. 

To make the macaroons:
1.  Preheat the oven to 300 degrees.
2.  Mix all the ingredients together.
3.  Let the mixture stand to allow the psyllium husk to firm up the batter.  The longer it sits, the firmer and less crispy the cookies.  Five minutes standing time and they will be crispy and spreading out while cooking.  I waited over 30 minutes for this batch, and the result was less spreading, and a softer cookie.  It's really your call, as I enjoy them both ways.
4.  Scoop 1-2 tbsp of batter onto lined cookie sheets. TRUST me, parchment paper is your friend, here. Removing these bad boys is so much easier with it!
5.  Bake for 23-28 minutes, watching closely after 20 minutes.
6.  Allow to cool for 25 minutes--otherwise your glorious macaroons will crumble!
7.  Store in an airtight container; they keep in the fridge for 5 days, or longer in the freezer.

These sound delicious.  What other kinds of oil do you mix with it?

I mixed in veggie oil, but I think sunflower oil or almond oil would be very nice.

Thank you for posting an awesome recipe for those of us trying to be health conscious but horribly addicted to sweets.

Next time I want to try a batch with some cocoa to make them a little chocolate-y.
