Ooh, I am intrigued!  I have been making cordials this summer, and wondered about mead!

Do you think something like this (http://www.amazon.com/Homesteaders-Supply-Pickle-Pro-vegetable-Fermenting/dp/B006JMJJP0) would work in place of the cotton wool?  Fluffy things don't last long in the land of kitty.  Also, I have gallon sized ball canning jars, which I'd just as soon use.

You can use an airlock (which is what this is) + drilling a hole into the original lid.  Of course you'd need to find another bottle or lid to the thing.  You use the airlock by putting a liquid in there - and it prevents air and nasties from getting in!  (Some people use vodka, and some use water...)  The vodka is for making sure that the liquid doesn't contaminate the mead if it goes into it accidentally!

Oh, I must certainly try this... I love mead so much (actually have a bottle of it sitting on my desk right now) and although it is hard to get in England it looks like it's easier here than in Canada! I must make some though- Thanks for the tute!! Cheesy

I'm actually thinking of making up another bottle and then aging it for however long it takes my last cousin (in this hemisphere) to get married!  (She has a high school sweetheart, but the guy's been dragging his feet like crazy.)

I dunno what flavour I'd make hers - maybe durian!  (A very fragrant chinese fruit!)

*Update:  I started another batch using fresh Bing cherries instead of durian - it's very very cheap to do.  I plan on aging this for as long as I can - maybe until my little cousin (she's 23) gets hitched!*
