I made some cupcakes yesterday, some that I have made before many times. But this time they came out with kind of a dense rubbery texture rather than the usual light fluffiness. This also happened about a year ago when I made a chocolate cake. I followed both recipes exactly, but the recipe isn't to blame as I have made both cakes many times before with no problem.

Does any one happen to have an explanation for this?

Aah yeh that maybe it thinking of it - I decided to use my hand mixer as it was out when I usually just mix with a spoon. Thanks for that  Smiley

Yup, overmixing will do it. When you overmix, you're activating the gluten, which is great for bread but not for cake.
